When time is short, the toddler is HUNGRY, and you still want to give them something nutritious, these quick fixes will do the trick.
You will need these essentials; make sure they're always in your kitchen!
– A microwave, of course
– Frozen veggies
Mash with Spinach (or Popeye with Potato)
Peel the potatoes and pop them in a bowl of water in the microwave till cooked.
Defrost and cook the frozen spinach (with a spoonful of water) in the microwave.
Mash the potatoes; add butter and salt to taste.
Mix in the spinach.
Your toddler is eating SPINACH. All's well.
Cook the rice in the microwave.
Defrost and cook some frozen veggies (peas, carrots, beans, cauliflower) in the microwave.
Add salt and other seasoning to the rice.
Stir in the veggies.
Defrost frozen veggies (I even do this with spinach) in the microwave. And simply add to the omelette. Add cheese for a yummier flavour.
If your toddler is a fussy eater, make a fun sandwich out of it.
Protein and vegetable goodness. In less than 10 minutes!
